It should come as no surprise that I constantly am thinking about cake, especially new designs, styles, flavors, and techniques. So when I have the opportunity to make a cake for fun I get to try one of these new ideas. For my birthday I knew I wanted a dried floral arrangement on a tall cake. I absolutely adore florals and greenery as cake accessories and dried florals and greenery are no exception. I found the perfect dried arrangement from Fern and Sunpalm I knew they had to be the star of the show. Jenny was lovely to work with and I waited with excited anticipation for the arrangement to arrive. When I got it, it was so beautifully arranged and the colors so harmonious I almost didn’t want to take it apart! It looked picture perfect and ready to be displayed. However, I also knew they were perfect for the cake I had in mind and needed to be taken apart. When I started baking my cake I partially knew what I wanted. Olive oil ricotta cake with a strawberry basil compote for one tier. The other tier I knew would be chocolate, but the filling I was unsure about. It wasn’t until I started experimenting with Not Your Granny’s Caramel Apples and coming up with my own flavors that I figured it out – espresso ganache with NYGA soft caramel and fresh raspberries. It was a *chef’s kiss* moment. Putting the cake together was such a joy because I loved seeing it all come together. With the cakes stacked and crumb coated I could create beautiful textured buttercream design. This would add another design element to it, while allowing the dried flowers to be the focal point. When arranging the florals I started with a few statement pieces – the spear palm, bleached fern, and roses – and built out with bunny tails, pampas grass, hydrangeas, etc. The result was a stunning bohemian style cake I was more than happy with. I was so ecstatic with it I knew just what I wanted to do with it. Grab my tall gold cake stand and run off to Papago Park to take pictures. My husband was ever so obliging, that he even went with me and took photos as well! I love how the photos turned out and the whole look of the scenery, stand, and cake. I think this cake (and stand) would be perfect for a desert wedding or even an elopement. Here is to 24! Now I’m going to start sketching and dreaming up my next birthday cake! After all, what’s better than 24? 25!
